250 gm(s) skinless chicken breast strips
4 tbsp(s) pesto sauce
2 courgettes, thinly sliced
410 gm(s) cannellini beans, drained & rinsed
juice and zest of 1 lemon
3 tbsp(s) olive oil, plus extra for cooking
2 tbsp(s) balsamic vinegar
55 gm(s) rocket leaves

Cooking Steps:
Presoak some wooden skewers in water. Preheat the barbecue. Slice the chicken into bite-sized pieces and put in a bowl with the pesto. Mix well.
Thread the marinated chicken pieces onto the wooden skewers. Drizzle the courgette slices with olive oil and season. Place on the barbecue and cook for 3-4 minutes on each side. Transfer to a serving dish with the cannellini beans.
Mix the lemon with the oil and vinegar and pour over the courgettes. Mix in the rocket.
Cook the chicken for 10 minutes, turning halfway through; serve with the salad.
