Cooking Steps:
Place the oats, coconut milk and a pinch of salt in a non-stick saucepan with 225ml cold water. Bring to the boil and simmer for 10 minutes, stirring occasionally to prevent sticking.
While keeping an eye on the saucepan, peel & cube the mango.
When the oat mixture is cooked through, serve topped with the mango cubes, a sprinkling of sugar and a couple of wedges of lime (for squeezing over) per person.
Tip: swap the coconut milk for skimmed milk to save 66 calories.
