Spicy Prawn Noodles

Ingredients:
 250 gm(s) wide ribbon rice noodles
 3 tbsp(s) Blue Dragon satay & sweet chilli pesto
 125 gm(s) each mangetout & sugar snap peas, finely sliced
 3 medium eggs, beaten
 3 tbsp(s) chilli soy sauce, plus extra to serve
 250 gm(s) cooked, peeled tiger prawns
 25 gm(s) dry-roasted peanuts, roughly crushed
  lime wedges, to serve (optional)
This is a cheat version of Pad Thai...
Cooking Steps:
Put the noodles into a bowl, and boiling water to cover and soak for 4 minutes to soften. Drain, rinse under cold water, and set aside.

Heat a large frying pan or wok to hot, add the chilli pesto and stir-fry for 1 minute. Add the vegetables and cook for a further 2 minutes. Tip into a bowl. Put the wok back on the heat, add the eggs and cook, stirring, for 1 minute.

Add the soy sauce and prawns to the wok, then the noodles. Toss together and cook for 3 minutes until piping hot. Return the veggies to the pan, cook for a further 1 minute to heat through, then sprinkle with the peanuts. Serve with extra soy sauce and lime wedges, if you want.

Classic thai food. Really quick and so tasty. If you haven't got the canola oil, just use sunflower or sesame oil.
