Thai Sweet & Sour Soup

Ingredients:
 1 ltr(s) home-made fish stock
 1 x 5 cm stalk of lemongrass
 2 limes
 2 tbsp(s) runny honey (preferably organic)
 1 handful(s) chopped coriander leaves, plus 4 whole tender sprigs
 500 gm(s) prawns, shelled

Cooking Steps:
In a large saucepan, warm the stock over a low heat.

Crush the lemongrass thoroughly.

Juice the limes. Mix the juice with the honey and lemongrass and heat gently with half of the stock for 5 minutes.

Remove the lemongrass and pour the honey mixture into the rest of the stock, along with the chopped coriander.

Simmer for 2 minutes, stirring continuously.

Add the prawns and poach gently for 5 minutes.

Serve sprinkled with the reserved coriander sprigs.
