Ingredients:
 1 Chicken (jointed) or 4 or 8 thighs
 6 potatoes (Maris Piper are good)
 1 onion
 2 sprig(s) rosemary
 2 cloves of garlic
 2 tbsp(s) cream cheese
I have this as a midweek supper or its a cheat Sunday lunch!

Cooking Steps:
1. Set oven to 200c or gas mark 6. Peel the potatoes and cut them up into about 2cm cubes. Peel and slice the onion into chunks.

2. Place the veg in a roasting tin, spread evenly, add half the rosemary and sprinkle with olive oil. Use your hands to enjoy all the veg is evenly coated.

3. Carefully pull up the skin on each piece of chicken and spread equal amounts of cream cheese under the skin of the chicken with a little rosemary.

4. Put the chicken skin side up on the veg, brush with a little oil and roast for about 55 minutes, until the chicken is cooked through and golden.
