Ingredients:
 2 tbsp(s) Olive oil
 4 Skinless, unsmoked haddock fillets
 2 Large handfuls of cherry tomatoes
 3 tbsp(s) Mayonnaise
 1 Garlic clove, crushed
 100 gm(s) White breadcrumbs
 Zest Of 1 lemon
 Juice Of 1 lemon
 2 Handfuls of flat leaf parsley, roughly chopped

Cooking Steps:
Heat the oven to 220C (fan 200C)/gas mark 7. With 1tbsp of the oil, lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other.
In a small bowl, mix the mayonnaise with the garlic, then spread evenly over the fish.
In a separate bowl, toss together the breadcrumbs, lemon zest, lemon juice and parsley, then season to taste. Top the fish with the breadcrumb mixture.
Drizzle the other 1tbsp of olive oil over the fish and tomatoes, then bake for 15 minutes or so, or until the fish flakes slightly when pressed and the crust is golden and crunchy.
