Easy blueberry pie

Ingredients:
  120 g butter
  1 egg
  225 ml caster sugar
  225 ml plain flour
  1 tsp baking powder
  200 g blueberries
Easy, slightly chewy blueberry pie. Good to freeze.
Cooking Steps:
Heat oven to 175°C. Lay baking paper in the bottom of a spring tin (ca 24 cm diameter) and grease tin lightly.

Melt the butter and let cool. Whisk egg and sugar until white and airy. Mix flour and baking powder and add to the egg mixture. Finally, add the butter.

Spread the mixture into the cake tin. Scatter the blueberries on top.

Bake in the lower part of the oven for ca 1 hour 10 min – cover with baking paper if looks like it’s getting too dark.

Serve warm with custard.
