Tomato and Basil Prawn Skewers

Ingredients:
 32 uncooked king or tiger prawns
 1 jar plain tomato passata
 10 sprig(s) basil
 8 long skewer sticks
Remember to prep the night before as you need to allow the prawns to marinade overnight. These are really good for either family BBQ’s or entertaining. They have an unusual marinade for prawns but believe it or not they go very well if you don’t overcook
Cooking Steps:
1. If the prawns are shelled, un-shell them completely. Chop the basil very finely. Mix in with the passata. Mix in the prawns. Make sure they are all completely covered.

2. Leave in the fridge over night, so that they can absorb the flavour of the tomato and basil. If you feel like it add a few garlic cloves.

3. Once refrigerated place 4 on each skewers. Place on a pre lit bbq and cook 2-3 minutes on each side.

4. If you wish to experiment with this dish, once cooked take them of the skewers and mix with some feta and olives or some cooked spinach.
