Thanks for info on sustainable skate. I often use Seafish to check these things. Also for tip on skinning wings and an encouragingly straightforward recipe (unlike the Delia one). I have never done skate in the oven (always pan-fried) but hey - why not? (And I'd better practise remembering: thornback and blonde ray!). By the way did you see my blog competition on the Forum? Fresh fish is ideal 'real food'!

skate in garlic butter

Ingredients:
 1/2 kg(s) medium skate wings
 4 cloves garlic
 100 gm(s) butter
 4 spring onions
Sustainable skate wings are thornback or blonde ray, great and tasty with garlic butter and stir fry veg. Good, healthy and surprisingly filling.
Cooking Steps:
make sure you get your friendly fisherman or fish monger to skin the wings both sides.
Fine chop the garlic and add with butter to a medium heat until butter melts.
Add skate wings to a flat oven dish and pour over butter.
Chop spring onions and sprinkle over too.
Add ground black pepper to taste.
make sure the skate is well coated and put in oven at 180 deg
check the fish often and turn so it does not stick to the pan.
when the thin parts of the wing brown and crisp then its done.
Serve with stir fry veg, or even steamed greens and mash potato.
Simple and easy, job done. Enjoy.
