Ingredients:
 1.5 kg(s) DUCK
 150 gm(s) BACON
 4 ONIONS
 6 tbsp(s) BUTTER
 1 kg(s) FRESH PEAS
  sprinkling(s) OREGANO, SALT,PEPPER
 1 LETTUCE
 2 cup(s) CHICKEN STOCK
BASED ON TRADITIONAL DISH FROM THE GREEK MAINLAND.
Cooking Steps:
Clean and wash the duck.Season with salt and pepper and place in a moderate oven and cook till tender and skin is crisp. Cut into four portions, remove as much bone as possible and place back in the oven on a low heat to keep warm. In the meantime, fry the onions in the butter, when soft add the bacon pieces, season, add oregano and chicken stock and peas. Cover the pot and leave to simmer until the peas our tender. When cooked, garnish the duck with the peas and serve with Dauphinoise potatoes.
