0.45 kg(s) large shrimp, peeled and deveined
1 1/2 tsp(s) grated orange zest
1/2 cup(s) orange juice
2 garlic cloves
2 tbsp(s) olive oil (plus more to oil grill)
1 tbsp(s) fresh thyme + 1 tsp for sauce
1/3 cup(s) lite mayo
coarse salt and pepper
This simple marinated shrimp dish is a super flavorful summer treat. Goes great with a cold wheat beer.

Cooking Steps:
1) Combine 1 tsp. zest, 1/4 cup orange juice, garlic, oil, 1 tbs. fresh thyme, 1/2 tsp. salt and 1/4 tsp. pepper.
2) Add shrimp to marinade and toss to coat. Cover and store in fridge for 30 minutes up to 8 hours. Soak skewers in water while marinating.
3) For dipping sauce: in small bowl, combine remaining 1/4 cup orange juice, 1/2 tsp. orange zest, 1 tsp. thyme, and mayo. Mix together and season with salt and pepper to taste.
4) Load shrimp on skewers, roughly 6 - 8 per skewer. Grill on medium heat for 3 - 4 minutes, turning once. Serve immediately with dipping sauce.
