Ingredients:
 3 avocados
 1/2 lime, just the juice
 1/2 red onion, grated
 1 red chilli, deseeded and finely chopped
 1 large sweet tomato, deseeded and finely chopped
 1 bunch(es) fresh coriander, finely chopped
  pinch(s) salt and pepper
Makes enough guacamole to accompany four glutty mexican meals or a huge plate of nachos.
Cooking Steps:
Peel your avocados and dice, making the chunks as big or small as you like. I like to use two fairly firm avocados and one quite ripe one to give a nice mix of textures. Mix with the lime juice immediately to stop any discolouration.

Combine with the remaining ingredients (only a little salt and pepper at this stage) and stir well, mushing it all up just slightly as you go.

Put cling film directly onto the surface of the guacamole the put in the fridge for 30 minutes to let the flavours amalgamate. Taste and add more of anything you feel is lacking.
