By the way, obviously you could add onion and garlic to this one but my husband can't tolerate either so my recipes are always adapted and these ingredients left out!

500 gm(s) skinless chicken breasts
1-2 limes, juiced
1 tsp(s) ground cumin
1 fresh green chilli, finely chopped
1 bunch(es) fresh coriander, chopped
1 green pepper, sliced
1 red pepper, sliced
8 flour tortillas
2 tbsp(s) oil
Salt and pepper to taste

Cooking Steps:
Slice the chicken into thin strips.
Marinate in the lime juice, cumin, chilli and half of the coriander for an hour or so although if you haven't got time to marinate it's still fantastic if cooked immediately.
Heat the oil in a stir-fry pan and add the marinated chicken. Season with salt and pepper.
Stir fry for 5/6 minutes or so until almost cooked.
Add sliced peppers and fry for another 3 minutes until they are softened and the chicken is cooked.
Add remainder of coriander and serve in warmed tortillas.
I like to add some shredded little gem lettuce, soured cream and tomato salsa.
