 2 kg(s) mussels, debearded
 2 cloves of garlic
 3 sticks of lemon grass
 2 fresh chillies
 3 tbsp(s) ginger
 2 handful(s) fresh coriander
 1 tbsp(s) sesame seed oil
 3 limes (juiced)
 5 spring onions
 400 ml(s) coconut milk

Cooking Steps:
This is so simple to cook. Get your wok very hot and add a few glugs of olive oil and place in the mussels. Put in all the rest of the ingredients except the lime juice and the coconut milk and toss it all around.
When all of them have opened add the lime juice and coconut milk and bring to the boil. Serve immediately with rice or crusty bread.

Classic thai food. Really quick and so tasty. If you haven't got the canola oil, just use sunflower or sesame oil.
